In a large bowl, whisk together 2 1/2 cups flour and 1 teaspoon salt. Add 1 cup cold cubed butter and cut in using a pastry blender or two forks until mixture resembles coarse crumbs.
Sprinkle ice water over the mixture, 1 tablespoon at a time, and mix until dough just comes together. Divide into two discs, wrap in plastic, and refrigerate for 30 minutes.
Preheat oven to 375°F (190°C). On a floured surface, roll out one dough disc into a 12-inch circle and fit into a 9-inch pie plate. Trim edges.
In a large bowl, toss sliced apples with 3/4 cup sugar, 2 tablespoons flour, cinnamon, nutmeg, and lemon juice. Pour into prepared crust and dot with 2 tablespoons butter pieces.
Roll out second dough disc into a 12-inch circle. Place over filling, trim, crimp edges to seal. Cut 4-5 slits in top for steam. Brush with beaten egg and sprinkle with coarse sugar if desired.
Bake for 45-50 minutes until crust is golden and filling bubbles. Cool on wire rack for at least 2 hours before slicing.
