Heat olive oil in a non-stick skillet over medium heat.
Add the sliced sucuk and cook for 4-5 minutes, stirring occasionally, until the pieces are crispy and release their oils. No need to add extra oil as sucuk is fatty.
Add the chopped onion and green bell pepper to the skillet. Sauté for 3 minutes until softened.
Stir in the diced tomato, salt, and black pepper. Cook for 2 minutes until the tomato starts to break down.
Pour the beaten eggs over the mixture. Gently stir everything together, scrambling the eggs until just set, about 2-3 minutes. Avoid overcooking for creamy eggs.
Remove from heat. If using, sprinkle crumbled feta on top.
Serve hot with fresh bread, olives, and sliced cucumbers on the side.
