Heat a large non-stick skillet or wok over medium heat for 2 minutes.
Add the raw peanuts to the dry pan and roast, stirring frequently, for 8-10 minutes until they turn golden brown and aromatic. Shake the pan occasionally to prevent burning.
Drizzle the vegetable oil over the peanuts and stir well to coat evenly.
Sprinkle in the chaat masala, red chili powder, turmeric powder, salt, and cumin powder (if using). Stir continuously for 1-2 minutes to toast the spices and coat the peanuts thoroughly.
Remove from heat and let cool completely on a plate (about 5 minutes). The peanuts will crisp up as they cool.
Store in an airtight container. Enjoy as is or with a side of chopped onions and lemon for extra zing!
