Mix warm milk (100–110°F), sugar, yeast, egg and melted butter. Add flour and salt, then knead 8–10 minutes until smooth and slightly tacky.
Place dough in a lightly greased bowl, cover and rise in a warm place until doubled.
Cook diced apples with butter, sugar, cinnamon, salt and optional lemon juice over medium heat for 5–8 minutes until softened and moisture reduces. If watery, add cornstarch mixed with 1 tbsp cold water and cook until thick. Cool completely.
Divide dough into 8 pieces. Flatten into 4–5 inch circles, add 1–2 tbsp cooled filling, pinch to seal, and set seam-side down on a parchment-lined tray.
Cover loosely and let rise 30–45 minutes until puffy. Preheat oven to 350°F (175°C). Brush buns gently with egg beaten with milk.
Set temperature to 350°F. Bake on middle rack at 350°F for 20–25 minutes until golden and cooked through. Brush warm buns with melted butter and cool 10–15 minutes before serving.
