Prepare the orange glaze: Zest the orange and juice it. In a small bowl, combine the orange zest and juice. Set aside.
Season the salmon and beef: Pat the salmon fillets and beef steak dry with paper towels. Season both sides with salt and pepper.
Heat the ghee: In a large skillet over medium-high heat, melt 1 tablespoon of ghee.
Sear the salmon: Place the salmon fillets skin-side down (if applicable) in the hot ghee. Sear for 4-5 minutes until the skin is crispy and the salmon is mostly cooked through. Flip and cook for another 2-3 minutes until cooked to your liking. Remove from the skillet and set aside.
Sear the beef: Add the remaining 1 tablespoon of ghee to the skillet. Increase the heat to high. Sear the beef steak for 3-4 minutes per side for medium-rare, or longer depending on your desired level of doneness. Remove from the skillet and let rest for a few minutes before slicing.
Deglaze the pan: Pour the orange glaze into the skillet and bring to a simmer. Cook for 1-2 minutes, scraping up any browned bits from the bottom of the pan.
Serve: Slice the beef steak and serve alongside the salmon fillets. Drizzle the orange glaze over both. Serve immediately.
