Seed oils are cooking oils extracted from the seeds of plants such as canola, corn, soybean, sunflower, safflower, cottonseed, grapeseed, and rice bran. They are cheap to produce, nearly flavorless, and used throughout packaged food, fast food, and restaurant kitchens. The debate around them is less about one proven danger and more about how they're processed and their heavy dose of omega-6 fat.
What Counts as a Seed Oil?
Not every plant oil is a seed oil. The term specifically refers to oils pressed or extracted from the seeds of crops grown mainly for industrial oil production, not for eating whole.
The most common seed oils are:
- Canola oil (from rapeseed)
- Soybean oil
- Corn oil
- Sunflower oil
- Safflower oil
- Cottonseed oil
- Grapeseed oil
- Rice bran oil
Soybean, canola, and corn oil together make up the large majority of seed oil consumed in the United States, mostly because they're cheap byproducts of crops already grown at massive scale for animal feed and biofuel.
How Are Seed Oils Made?
Seeds like soybeans or canola contain only a small percentage of oil by weight, so getting it out efficiently takes more than simple pressing. Most commercial seed oil production follows a similar path.
- Seeds are cleaned, cracked, and heated to make the oil easier to release.
- A solvent, usually hexane, extracts nearly all of the remaining oil from the seed meal.
- The crude oil is refined to remove the solvent, along with waxes, gums, and free fatty acids.
- The oil is bleached to strip out pigments, then deodorized with high-heat steam distillation to remove odor and taste.
This is why most seed oil on a supermarket shelf is clear, odorless, and neutral-tasting. The processing removes almost everything except the fat itself, including flavor compounds and much of the naturally occurring antioxidant content.
Why Are People Avoiding Seed Oils?
Three arguments show up most often in the seed oil debate.
The first is about omega-6 fat. Seed oils are high in linoleic acid, an omega-6 fatty acid, and some researchers argue a diet heavy in omega-6 relative to omega-3 fat may push the body toward a more inflammatory state. Others point out that clinical trials haven't consistently shown linoleic acid raises inflammatory markers in the blood.
The second is about processing itself. Critics point to hexane solvent extraction, high-heat refining, and industrial-scale production as reasons to be wary, even though refining is specifically designed to remove hexane residue and other impurities before the oil reaches food.
The third argument, and probably the sturdiest one, is about what seed oils usually come mixed into. They show up heavily in ultra-processed foods: chips, packaged baked goods, fast food, and fried snacks. Diets built around those foods are consistently linked to worse health outcomes, but it's genuinely hard to separate the oil itself from the processed food it usually arrives in.
